this may be to the disapproval of all those christmas-spirit-in-november haters* out there, but i am well and truly in a christmas mood. good ol' danish christmas fair yesterday just really did it, except for that santa claus who was really just not a very good santa claus. then i just compiled a christmas song cd for our lovely little family outing to buy a new (plastic) christmas tree from the glory that is david jones' christmas level. and i'm uber excited to make a gingerbread house, using a prebaked kit ofcourse, but a gingerbread house nonetheless, with flo sometime these holidays. i don't think i can wait though, perhaps a new house every week, that sounds a little better to me. but for now, here's some scrumcious inspiration for our creations:

danish dynamite

just devoured more than my fair share of hindbaer snitter and now i'm moving onto the new editions of costume and cover. gotta love being danish ..




Hindbaer Snitter are an extremely popular pastry in Denmark, a staple on many fine bakery shelves. One bite, and you'll never settle for a box of stale, cardboard-like toaster pastries again!

Prep Time: 1 hour, 10 minutes
Cook Time: 15 minutes

Ingredients:
2 1/2 cups all-purpose flour
1 1/4 cups confectioner's sugar plus 1 cup for glaze
1 tsp. vanilla sugar (optional)
1 tsp. baking powder
3/4 cup butter, diced into small cubes
1 egg, beaten
1 cup raspberry jam or preserves
2-3 Tbsp. water
decorating sprinkles / nonpareils

Preparation:
Whisk together flour, 1 1/4 cups confectioner's sugar, vanilla sugar (if using), and baking powder. Using a pastry blender or two knives, cut the butter into the flour mixture until it resembles small crumbs (it will be the texture of basic pie crust dough). Mix in beaten egg to form a soft dough. Divide dough into two halves, cover each with plastic wrap, and refrigerate for one hour.
Preheat oven to 375º. Using a rolling pin with a cotton sleeve, roll out each half of the chilled dough into an 8" x 12" rectangle. Trim the edges to make them square, then carefully roll the dough around your pin and transfer to parchment paper-lined baking sheets. Bake for 12-15 minutes, until golden brown. Remove from oven and allow to cool.
Spread raspberry jam on bottom layer and cover with top layer. Combine 1 cup confectioner's sugar with 2-3 Tbsp. water to form a thick glaze. Spread on top layer of cookie and sprinkle with nonpareils. Once the glaze has "set" (about 10 minutes), cut into bars.

Yield: 15-20 hindbaer snitter.

holy jesus is it hot. i had plans for today, many plans but quite frankly i don’t think i’m prepared to leave the house. i’m sorry talia, i really am, but i can’t make myself catch a bus for an hour in this heat to get to a family fun fair where we’ll be sitting under some tree surrounded by the rest of the northen beaches, fighting off the flies and sweating my pits off, considering i’ve spent the last week doing exactly that. your present is on it’s way though.

new moon//


i've been dying to watch new moon all week but now that it's out, i don't really have the time. i had plans to watch it last night but vanilla ice-cream, mint dark chocolate, mtv and my much-missed doona was too good to pass up. but apparently it's going to be 43 degrees today, give or take, perfect weather for disappearing into a dark, cool cinema with a large diet coke if you ask me ..
